The six programs offered through the International Culinary School are the Diploma in Baking and Pastry; Diploma in Culinary Skills; Associate of Arts in Culinary Arts; Associate of Arts in Wine, Spirits, and Beverage Management; Bachelor of Science in Culinary Arts Management; and Bachelor of Science in Food and Beverage Management.
About the Diploma Programs
The Diploma in Baking and Pastry course is focused on providing theoretical learning and industry experience in food safety, nutrition, basic culinary skills, and four baking-intensive quarters.
The Diploma in Culinary Skills offers much of the same training, with a stronger focus in American cuisine, making sauces, cooking meat, preparing vegetables, and recipe development.
About the Associate of Arts in Culinary Arts Program
The AA in Culinary Arts is a 21-month program. It covers basic kitchen skills as well as international cuisine and restaurant management. It is rounded off with an externship at a food service facility in the surrounding greater Washington, DC area.
The AA in Wine and Spirits covers the basics of the beverage side of running a successful restaurant or establishment. In addition to basic culinary techniques, the course includes bar supervision, food and wine pairings, and event management. Students must be 21 to participate in this course.
About the Bachelor of Science in Culinary Arts Management Program
The BS in Culinary Arts Management program is a much more in-depth course. It spans four years, beginning with basic culinary skills and moving up to advanced techniques. Outside the kitchen, it teaches students to work in restaurant management, human resources, the financial aspect of running a business, and legal issues.
The entire course ends with a senior capstone project, after which time students receive either a Certified Culinarian or Certified Pastry Culinarian distinction from the American Culinary Foundation.
About the Bachelor of Science in Food and Beverage Management Program
The same distinctions are bestowed on graduates of the BS in Food and Beverage Management program. It focuses on teaching students the secrets of running both the kitchen and the bar of a successful restaurant.
In addition to basic culinary skills, students learn the secrets of bar operation and control, general business management, and food and wine pairings. Like the AA in Wine and Spirits, this course requires a minimum age of 21.
Accreditation
The Art Institute of Washington is fully accredited by the Commission on Colleges of the Southern Association of Colleges and Schools. This gives the school the authorization to offer Associate and Bachelor degrees in all of its current fields. The International Culinary School is further recognized by the American Culinary Foundation as a school capable of training top-notch aspiring chefs and kitchen service professionals.
Financial Aid
Private loans, federal assistance, and state grants and loans are accepted for those students who qualify. Other financial assistance programs include a system for payment plans and budgeting guidelines. The Financial Aid Office offers help to all students with applications, finding funding options, and simply answering questions or concerns. They may occasionally provide information on scholarship opportunities.
Faculty
Faculty members are chosen for two primary reasons: the first is their proven experience in the culinary field, and the second is their commitment to making the most out of each student's potential. They teach through a combination of leadership skills training, hands-on culinary applications, and a focus on current technology.
Most culinary classes are taught by chef-instructors who come from a variety of national and international restaurants; the Culinary Management courses are taught primarily by the behind-the-scenes masters of successful businesses.
Facilities
The Art Institutes' Arlington location was opened in 2000. Its modern facilities include classrooms, student lounges, a library, a student center, and the teaching kitchens. The kitchen facilities are modeled on industry-standard kitchens, combining both the space necessary for letting all the students get a hands-on approach and simulating a real working space.
