Auguste Escoffier was an innovator in French cuisine in the early 1900’s. The school strives to provide programs that are consistent with Escoffier’s culinary standards and teachings as well as introduce students with modern cooking techniques and skills. The school offers accelerated baking and cooking programs so that students have the opportunity to acquire the skills they need for their professional goals in a short amount of time.
Auguste Escoffier School of Culinary Arts is committed to sustainability and “green” living. The school is dedicated to sustainable farming and promoting knowledge about farm-to-table eating. Whenever possible, Auguste Escoffier works to reduce its environmental impact by recycling, composting, as well as sourcing local products for classroom use.
Auguste Escoffier School encourages their students give back through community service. The School reaches out to the surrounding community by donating money to the local food bank, Community Food Share, to ensure that unused classroom ingredients don’t go to waste.

The Culinary Arts program offered at Escoffier in Austin is a team-oriented approach to learning cooking techniques and skills over a 40-week period. Students will have the chance to prepare lesson meals in an industry-professional kitchen while working in small group settings. Faculty professionals employ over 50 Escoffier Le Guide Culinare recipes to demonstrate basic cooking methods.
Some of the program highlights include introduction to kitchen management, daily bread baking, honing knife skills, developing a sauce repertoire, and dining with peers to evaluate menu items. Instructors teach small sizes to give students hands-on training in the kitchen.
The curriculum also includes a 3-week Farm to Table Experience, in which students learn about sustainable farming practices from local community farmers and artisan producers.
The Pastry Arts program in Austin is 32 weeks and covers basic baking and pastry techniques. Students will work closely with their peers and instructor throughout the duration of the program. Generally, a student will remain with the same 16-person group throughout the Pastry Arts Program. The coursework is designed to teach students about the formulas for pâte à choux, pâte brisée, and pastry cream.
