The Cooking and Hospitality Institute of Chicago’s vision is to be recognized as the top higher education institution in the field of hospitality. The school itself has been around since 1983. Over the subsequent 17 years, it became such a success that it was approached by Le Cordon Bleu for a possible partnership. In 2000, the affiliation with Le Cordon Bleu was solidified, and the Institute of Chicago is now held to the rigorous standards for which the Paris-based culinary school is known.
The Cooking and Hospitality Institute of Chicago offers a number of degrees and programs. Two of the programs result in an Associate of Applied Science Degrees: one in Le Cordon Bleu Culinary Arts, and one in Pâtisserie (Pastry-Making) and Baking. An additional program offers a Certificate in Le Cordon Bleu Culinary Arts.
About the Le Cordon Bleu Culinary Arts Program (A.AS)
The Associate of Applied Science Degree in Le Cordon Bleu Culinary Arts is designed to give students entry into mid-level positions upon graduation. The course is well-rounded and offers training in culinary arts, baking and pastry, and management.
Classes in food sanitation, direct restaurant experience at the student-run CHIC Café, and training in classical as well as modern techniques round out the course. Upon completion, graduates also receive Le Cordon Bleu Diplôme, which is recognized around the world for its prestige.
About the Le Cordon Bleu Pâtisserie and Baking Program (A.AS)
The Associate of Applied Science Degree in Le Cordon Bleu Pâtisserie and Baking shares many of the fundamentals of the Culinary Arts degree, but with an intensive focus on pastry making and baking. In addition to skills training in dough, cake, bread, and dessert, students are taught the fundamentals of the pastry industry and kitchen organization skills.
One of the primary draws of this program is the combination of classical French methods and modern American technology. Students are also required to fulfill a 12-week externship, after which time they also receive Le Cordon Bleu Diplôme.
About the Certificate in Le Cordon Bleu Culinary Arts Program
The Certificate in Le Cordon Bleu Culinary Arts Program is a fast-paced instructional course that can be completed in 30 weeks. It is designed for students seeking entry-level kitchen work by providing hands-on training and an introduction to many cooking fundamentals.
Accreditation
The Cooking and Hospitality Institute of Chicago is accredited by The Higher Learning Commission, and both Associate Degree programs are accredited by American Culinary Federation Foundation.
