About the California Culinary Academy

The California Culinary Academy was founded in 1977 by Danielle Carlisle in San Francisco, California. Carlisle started with four kitchens and six chef instructors in an old brick building in downtown San Francisco. Her first class of 20 students enrolled in the summer of 1977. With the growing demand for cooks and chefs in the area, the Academy's opening signaled the first program of its kind on the West Coast.

San Francisco Culinary Arts StudentIn the early 1990s, the California Culinary Academy created a television series and video collection entitled "Cooking At The Academy" that has appeared on PBS and brought national fame to the school.

California Culinary Academy also offers culinary training via its partnership with Le Cordon Bleu, a world-renowned culinary arts tradition. First founded in Paris in 1895, the roots of the Le Cordon Bleu tradition trace back to the 1500's. Today, this internationally respected culinary-arts curriculum is alive and well, and is still known for providing students with innovative culinary arts training backed with centuries of expertise and tradition.

Le Cordon Bleu Culinary Arts - Associate of Occupational Studies

Combining French cooking methods with modern American technology, the Associate of Occupational Studies in Le Cordon Bleu Culinary Arts program is designed to equip graduates with the skills needed in order to pursue a wide variety of positions in the culinary industry. A well-rounded course of study, students of this program will combine theory with skill in learning classical French cooking methods, nutrition, sanitation, and food preparation.

In addition, coursework will emphasize the organizational methods, timeliness, and procedures that are essential to being a productive member of a culinary team. Students will learn front and back of house operations, and gain exposure to cross-cultural and international cuisines and culinary traditions. The Associate of Occupational Studies in Le Cordon Bleu Culinary Arts curriculum culminates with a 12 week externship at a local culinary institution. This externship provides students with real-world experience in a supportive educational setting.

Le Cordon Bleu Pâtisserie & Baking - Certificate

A certificate program, the Le Cordon Bleu Pâtisserie & Baking curriculum at California Culinary Academy is designed to equip graduates with the skills needed in order pursue a career in the baking and pastry sector of the culinary arts industry. Focusing on hands-on training, this program provides students with the technical skills and solid theoretical foundation needed in order to become a contributing member of a culinary team. In addition to learning about the fundamentals of baking and pastry arts, students will also learn to develop their own approach.
