California Culinary Academy
Founded in 1977 by Danielle Carlisle in San Francisco, California. Carlisle started with four kitchens and six chef instructors in an old brick building in downtown San Francisco. Her first class of 20 students enrolled in the summer of 1977. With the growing demand for cooks and chefs in the area, the Academy's opening signaled the first program of its kind on the West Coast.
In the early 1990s, the Academy created a television series and video collection entitled "Cooking At The Academy" that has appeared on PPS and brought national fame to the school.
Culinary Arts
The Le Cordon Bleu Culinary Arts program blends demonstration classes with hands-on, practical courses in professionally equipped kitchens. As part of this dynamic program, students will have the opportunity to learn classical cooking methods and the qualitative aspects of food preparation, including nutrition and sanitation.
Students are encouraged to explore their own style and creativity under the guidance of our executive chefs. Plus, as with all of our programs, there is a general education component built into the program that is designed to provide a solid academic foundation for our student's career and personal growth.
Programs
Culinary Arts - emphasizes the principles and procedures as well as the history, evolution, and diversity of culinary arts. You'll have the opportunity to learn how to prepare appetizers, soups, sauces, vegetables, garde manger, charcuterie, entrées, breads, pastries, and desserts. You'll also learn to identify, fabricate, and portion meats, poultry, and fish. Other topics covered in these cooking courses include sanitation, hygiene, safety procedures, cost control, human resource management, and styles of table service.
Baking & Pastry Arts - Learn how you can have a delicious career in baking and pastry arts by getting the hands-on training and specialty skills from our Baking and Pastry Arts Certificate Program. This 30-week program is designed to provide a comprehensive study of baking and pastry to prepare you for various positions at bakeries, pastry shops, restaurants, hotels, and the rapidly growing segment of in-store supermarket bakeries. The program emphasizes the hands-on application of fundamental techniques and ingredients.
Hospitality & Restaurant Management - The Le Cordon Bleu Hospitality & Restaurant Management Program can provide a strong basis in hospitality management practices as well as basic culinary skills that will help you achieve your goals in the foodservice and hospitality industry. You'll be introduced to both front of the house as well as back of the house operations.
Topics of study include hotel operations; restaurant management, accounting, and law; small business management; wine studies; professional communications; human resource management; gaming/casino management; basic culinary arts training; and mixology/beverage service.
Student Housing
California Culinary Academy offers easy access student housing for many students. Rooms are available in single or double occupancy and offer a variety of amenities. The school also have numerous housing options for students with spouses and families, making it affordable to live here with your loved ones.
