Programs of Study
The International Culinary School at The Art Institute of Dallas students come to them from different levels of experience but they all share the same thing - a passion for cooking. And they know something else: There are no shortcuts to a great culinary education. It's why they are there.
Certificate in The Art of Cooking: This 12 Quarter program trains you in the basics of culinary art. Here you will learn speed, coordination and most importantly, teamwork. You should be ready to enter the market and find an entry level position as a banquet cook, breakfast cook, shift leader or line cook.
Associate of Applied Science and Certificate in Baking & Pastry: a program combining hands baking with an emphasis on pastry and bread making with business skills and critical thinking.
Associate of Applied Science and Certificate in Culinary Arts: This degree program builds on the material covered in the certificate course and through knowledgeable instruction gives the student a foundation in hand and knife skills as well as a more in-depth study of baking and pastry preparation. The student will also learn about pantry cooking, American and international cuisines.
There is a focus on the development of presentation, teamwork, and time management skills. Instructors will also give an advanced course in food preparation that will also you to create delicious dishes from even the most basic ingredients. Graduates from this program will be able to join the food service industry in entry-level positions such as line cook, prep cook and first cook in food service facilities such as hotels the world over.
BS in Culinary Management: The goal of this specialty degree is to prepare students to become a manager or supervisor of kitchens and food & beverage establishments. Students will gain the skills necessary to manage the foodservice industry. These tasks include: cooking and kitchen skills, communication, training, leadership, management and more. Upon graduation, students will be prepared to enter the hospitality industry in various entry-level positions including banquet chef, grill cook, broiler cook and chef garde manger.
The Bachelor Science in Culinary Management program is 12 Quarters. Student learning includes lectures, labs, tutorials, filed trips, externships, and classroom demonstrations. Classes in this program include: Hospitality Technology, Managerial Accounting, History and Evolution of Food, etc.
AAS in Restaurant & Catering Management: With an emphasis on food service management skills, your focus will be human resources, accounting, finance, technology, leadership and communications. If you are interested in managing a restaurant or catering company, this may be a good program for you.
