About the Diploma Programs

The two diplomas offered through the International Culinary School are the Art of Cooking and Baking and Pastry. The Art of Cooking program offers 51 quarter-credits in basic kitchen skills and food science.

The Baking and Pastry program is a 49 quarter-credit course that focuses on the skills necessary for working in a bakery, including making breads, desserts, and cakes. Both diploma programs include training in ServSafe sanitation and safety as well as job seeking skills. Graduates are typically ready to work in entry-level food service positions.

About the AAS in Baking and Pastry Program

The Baking and Pastry Arts curriculum is a well-rounded approach to education. Not only do students get intensive study in core baking and pastry classes, but there is an additional emphasis on general culinary skills and business. About the AAS in Culinary Arts Program

To earn a culinary arts degree takes two academic years or 6 quarters. During this time you will be taking courses like Introduction to Culinary Skills, Food Production, Kitchen Supervision, Nutrition, Garden Manager, Baking & Pastry, Menu Management, Wine Management and a whole lot more.

Once you graduate, you will be prepared for an entry level position as a garde manager cook, station chef or baking and pastry cook.

About the BA in Culinary Management Program

A 39 month program, this program starts with the same courses offered in the diploma and Culinary Arts programs. In addition to these courses, the Culinary Management program focuses on the business aspects of the trade, such as beverage and menu management, marketing, accounting, customer service, human resources, and all the other techniques of the culinary industry
