Rice Guiseppe Verdi
Makes approx. 6 servings
- 1/2 cups chopped onion
- 4 tbl. butter
- 2-1/4 cups rice
- 2-1/2 cups chicken stock (we recommend 1 oz. Glace de Poulet reconstituted in 2 1/2 cups hot water)
- 1/2 cup sliced mushrooms
- 1/2 cup asparagus tips
- 1/4 cup diced ham
- 1/2 cup skinned, diced roma tomatoes
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- Salt and pepper to taste
Sauté the onion in butter until golden in color. then stir in rice, and chicken stock.
Add mushroom, asparagus, ham, and tomatoes.
Season and cover. simmer gently till tender.(approx. 15 minutes) stir in cream and gently mix in the cheese.
