About The Connecticut Culinary Institute

Hartford Culinary Arts StudentEstablished as a small venture in 1987, the Hartford branch of The Connecticut Culinary Institute is the original campus of the school. The Connecticut Culinary Institute is unique in that no classroom is larger than 15 students; personal attention and hands-on experience are part of the school’s proudest features. The school commits itself to always staying abreast of the latest technologies while never forgetting the classic techniques that developed the culinary field.

There are three programs offered by the school: the Advanced Culinary Arts Program, the Professional Pastry and Baking Program, and the Advanced Italian Culinary Arts Program. Together, they provide a comprehensive list of possibilities for students of all interests.

About the Advanced Culinary Arts Program

The Advanced Culinary Arts Program encompasses either 60 or 90 weeks, depending on the choice of day or evening classes. Both are designed for beginning students or those seeking to advance their careers. Through a combination of class lectures, demonstration, culinary theory, and a heavy dose of hands-on work, the curriculum is diverse.

It includes classes in basic safety, kitchen skills, and international cuisine. Baking and cooking skills are stressed, as is restaurant management. The course is rounded off with an externship, which allows students to better prepare for entry into the culinary field.

The Professional Pastry and Baking Program lasts 35 or 47 weeks (again depending on the time of day of the class). It is similar to the Advanced Culinary Arts Program in that it focuses on preparing students for entry-level careers by combining a well-rounded curriculum with a professional externship. Classes include things like basic baking, chocolate artistry, and classic pastries and desserts.

About the Advanced Italian Culinary Arts Program

The Advanced Italian Culinary Arts Program takes cooking to a whole new level by including a 3-week course in Monferrato, Italy. The entire course takes 60 weeks, with a strong emphasis on Italian classical techniques and flavors. It combines the same hands-on basic training techniques of the other programs with Italian language courses and sessions dedicated to things like pastas and antipasti.

Accreditation

The school has the certification to prove its reputation. All three programs at the Connecticut Culinary Institute are accredited by the Accrediting Commission of Career Schools and Colleges of Technology. The Advanced Culinary Arts Program has additional accreditation from the American Culinary Federation Foundation Accrediting Commission. The school itself has approval from its state’s Commission of Higher Education.

Financial Aid

Financial aid is available through appropriate loan and grant institutions. The school offers a full-time Financial Aid Office to help students identify and apply for whatever type of financial aid they are qualified to receive. This includes federal loans and grants, work-study programs, private loans, and outside scholarships.

Faculty

The faculty members of the Connecticut Culinary Institute are selected for their dedication to working intimately with students. With class sizes significantly smaller than those found in many other culinary schools, it is important to the school that the faculty is composed of professionals with experience in the field and a love of teaching others.

Personal attention to each student is key, and all members of the faculty are required to stay abreast of current technologies. Because the school emphasizes post-graduation employment, the instructors are also trained in real-world restaurant work.

In addition to six newly constructed teaching kitchens, the campus also features a large production kitchen, two amphitheaters, a computer lab, and a Learning Resource Center.
