About the Culinary Arts Program
The Culinary Arts diploma program at Kitchen Academy requires students to complete 40 credit hours over 32 weeks. Instruction is focused on skills that students will need to be great chefs, such as cutting techniques, weights and measures, working with various ingredients, baking, pastry, and more. Also, students work on individual projects as well as in teams, to simulate working in a restaurant kitchen.
During their last six weeks, students have the opportunity to use the knowledge and experience they’ve gained to work in an established restaurant. This internship provides them with even more valuable work experience that will help in their career search. Upon completion, students have the skills, know-how, and confidence to enter the fast-paced competitive culinary world.
About the Professional Baking and Pastry Program
In this program, Kitchen Academy students learn the fundamentals of baking and pastry, including weights and measures, baker’s percentage, ingredients, mixing, terminology, proper use of tools and equipment, as well as food safety and sanitation. As students progress, they are exposed to more advanced baking and pastry making techniques, learning to make more complex culinary treats. The professional baking and pastry program requires students to complete 35 credit hours over about 24 weeks.
