About the Culinary Institute Alain & Marie LeNotre

The Culinary Institute opened in 1998, and is owned by husband and wife Alain and Marie LeNotre. Alain has more than 40 years of experience as a cook, pastry chef, candy maker, and more. He also has decades of experience teaching. The motto of the Culinary Institute Alain & Marie LeNotre (CIAML) is “tradition, quality, respect,” and it describes the school’s approach to culinary education. The courses are based on the tradition and competencies of French cooking, which can be applied to any cooking style and venue.

Culinary Arts Student DallasOriginally opened as a training center for people seeking a culinary arts career, for food enthusiasts and for continuing education, the school has recently added academic associate degree programs to its menu.

To date, CIAML currently offers three diploma programs, two associate degree programs, “Chef Club” classes and summer camps. Featuring intensive, hands-on, fast track education, these programs prepare graduates for employment in the food services industry, which is rapidly expanding and experiencing a shortage of good sous chefs and managers.

About the Culinary Arts Programs

The Culinary Institute Alain and Marie LeNotre offers both a diploma and an Associate in Applied Science Degree in Culinary Arts. Students pursuing an Associate degree can expect to be prepared for entry-level to mid-level food service management at the end of their six-quarter program.

This is an ideal program for those wishing to become sous chefs and eventually executive chefs. Courses include general education in areas like psychology, as well as field-specific training in everything from sanitation to baking to wine pairing. Students are also taught business writing, budgeting, inventory management, and more.

Accreditation

The Culinary Institute Alain and Marie LeNotre has been accredited by the Accreditation Commission of Career Schools and Colleges of Technology. It also has approvals from the Texas Workforce Commission, Career Schools and Veterans Educations Section; the Texas Higher Education Coordinating Board; and the Department of Education Federal Student Aid Programs. In addition, the Institute is endorsed for quality education by the American Culinary Federation Foundation.

Financial Aid

Financial aid in the form of grants, loans, and scholarships is available to students who qualify. These awards may be need-based – dependent upon the student’s financial need – or non-need based.

Prospective students should fill out a Free Application for Federal Student Aid (FAFSA) and should also contact the financial aid office to make an appointment to discuss aid possibilities. More than $162,000 was awarded in scholarships in the 2006-2007 school year, and students are encouraged to check with the financial aid office to learn what scholarship opportunities are available.

Faculty

In addition to Alain LeNotre, other chefs teaching in the school include Pierre Yves Le Bihan, Kristopher Jakob, and Sebastien Bonnet. Each of these chef-instructors holds degrees as well as a minimum of 10 years of personal experience in their fields of expertise. To get the most out of instructor-student relations, classes have no more than 12 students per instructor.

Facilities

Approximately 90 percent of the instruction at the Culinary Institute Alain and Marie LeNotre is hands-on in the kitchens. The campus includes a 14,000 square-foot facility with catering labs, a lounge, and a conference room. There is also an amphitheater for training and entertainment needs.
