Le Cordon Bleu Hospitality & Restaurant Management - Associate of Specialized Business

A program that focuses on developing the principals of management and cooking, the Le Cordon Bleu Hospitality & Restaurant Management curriculum is a unique program that was developed in South Australia in 1992. Preparing graduates for employment in the food service industry as a manager, this program offers an unparalleled level of training. As such, professionalism is a key element to this exciting curriculum.

As part of this program, students will learn how to manage all aspects of a restaurant. Receiving hands-on, practical education, the Le Cordon Bleu Hospitality & Restaurant Management course of study is geared towards meeting the needs of culinary industry employers, as it focuses both front of house and kitchen managerial strategies.

Le Cordon Bleu Pâtisserie & Baking - Associate of Specialized Technology

Pennsylvania Culinary Institute is pleased to offer prospective culinary students the Associate of Specialized Technology in Le Cordon Bleu Pâtisserie & Baking degree program. Focusing on the fundamentals of pâtisserie and baking, this curriculum also includes an extensive look at the fundamentals of baking and pastry arts. Coursework includes nutrition, dietetics, sanitation, food chemistry, communication, and kitchen management. In addition, students will learn how to create beautiful displays and show pieces.

Le Cordon Bleu Culinary Techniques - Diploma

An 8-month program the Diploma in Le Cordon Bleu Culinary Techniques curriculum is designed to equip students with a solid foundation in culinary terms, techniques, and procedures. Culminating with an 8-week externship that allows students the opportunity to apply classroom theory in a real-world environment, this program also focuses on developing the hand-eye coordination, stamina, and dexterity necessary for the culinary arts.

Coursework includes French culinary techniques and terns, buffet preparation, food identification and beverage composition, sanitation, garde manager work, plate presentation, baking and pastry, and front/back of house procedures. Graduates of this program will be well-prepared to seek entry-level employment as a cook, prep-cook, or line cook in a variety of culinary settings.
