Star Career Academy has been in existence since 1996. In its first year, it only offered a Certificate in Professional Cooking. One year later, it added the Certificate in Commercial Cooking. All training provided by the school is performance-based, meaning that hands-on applications are stressed over simple observation or lectures. Class schedules are designed with flexibility to allow students currently working in other fields access to a culinary education in as few as nine months.
The Certificate in Professional Cooking Program prepares graduates for entry-level food service roles. Courses include basic food preparation, knife handling, meeting deadlines, display, basic baking and cake decoration, large-party catering, food sanitation, and restaurant operations. The course is rounded off with an internship for real-world experience.
The Certificate in Commercial Cooking Program is an evening-only course for students entering the field for the first time or seeking to expand their skills. It includes basic food preparation, large-party catering, and a special focus on planning event meals. As is the case with the Professional Cooking Program, students are required to complete an internship.
The Certificate in Professional Pastry and Baking Program includes advanced learning in breads, cakes, pastries, and other desserts. The internship for this program requires 200 hours of professional experience, and prepares graduates for entry-level positions in a number of food-related industries.
Star Career Academy is accredited by the Accrediting Commission of Career Schools and Colleges of Technology. It is recognized by the New York State Department of Education and a number of culinary associations, including the American Hotel and Lodging Association, the International Association of Culinary Professionals, and the National Restaurant Association.
Financial aid is available to those who qualify. The school participates in the Title IV Federal Programs, so it accepts federal and state loans, grants, and scholarships. For those needing assistance in educational finance planning, there is a Financial Aid Office that can help with applications and private loan options.
The school’s chef-instructors are hired on the basis of their own educational and professional experiences. They are leaders in the industry – many of whom have run their own kitchens or restaurants. The lineup includes Chef Mick Gehnrich, a graduate of the Culinary Institute of America and a frequent face at cooking competitions around the nation; Chef Leonard Messina, a certified Executive Pastry Chef with over 23 years of experience in the field; and Chef Richard Schrimp, who is ranked in the Top 100 Instructors according to the Chef 2 Chef Culinary Portal.
All the facilities at Star Career Academy are fully-equipped with modern kitchens. The kitchens at Star Career Academy are meant to parallel the working conditions in the real world. Even the student lounge areas follow this trend – they are actually dining rooms capable of handling full-service meals and restaurant simulations. The facilities also boast four fully-operating kitchens in addition to resource rooms and a library.
