About the Diploma in Culinary Arts - Baking and Pastry Program
Students of the Culinary Arts - Baking and Pastry program will learn fundamental bread-baking and pastry techniques, pastry arts, cake decoration,and all purpose baking skills (including desserts). In addition to these skills, students will also learn business essentials in a hands-on environment. With these skills, graduates will be prepared to gain entry level employment as a baker, pastry cook, or line cook.
About the Diploma in Culinary Arts - Culinary Skills Program
The Culinary Skills program is designed to give students the practical knowledge of techniques and procedures required to succeed in culinary arts. Taught by experienced culinary professionals, this program will guide students through topics such as choosing the correct knife to the proper use of specialized kitchen equipment. Graduates are prepared to seek entry-level employment such as line cook and pantry cook (garde manger).
About the BS Culinary Arts Management Program
The BS in Culinary Arts Management program is a very in-depth course. It spans four years, beginning with basic culinary skills and moving up to advanced techniques. Outside the kitchen, it teaches students to work in restaurant management, human resources, the financial aspect of running a business, and legal issues. The entire course ends with a senior capstone project, after which time students receive either a Certified Culinarian or Certified Pastry Culinarian distinction from the American Culinary Foundation.
About the AA in Culinary Arts Program
The AA in Culinary Arts is a 21-month program. It covers basic kitchen skills as well as international cuisine and restaurant management. It is rounded off with an externship at a food service facility in the surrounding area.
Accreditation
The Art Institute of Tennessee is accredited by the Accrediting Council for Independent Colleges and Schools, granting it the authority to award both Associate degrees, Bachelor degrees, and diplomas. In addition, The Art Institute of Tennessee - Nashville is is authorized by the Tennessee Higher Education Commission as a post-secondary educational institution.
Financial Aid
All students have access to help from the school's Financial Aid Department. If qualified, access to state and federal loans and grants is offered. The school will help with applications and funding upon request. As with all Art Institute locations, chef-instructors are chosen for their experience in the culinary field as well as their commitment to teaching. Facilities
Each student of the International Culinary School has access to state-of-the-art kitchen equipment. Modern techniques are taught alongside classical styles, and students are encouraged to explore their own unique methods. To increase the potential for hire after graduation, many skills focus on real-world skills.
