Portland Culinary Arts StudentsThe school's mission is to provide educational programs to best prepare students for landing entry-level jobs. This is accomplished by combining academics with critical thinking skills, job-related learning, and effective teamwork. All International Culinary Schools at the Art Institutes provide a well-rounded curriculum that encompasses international cuisine and techniques. The Art Institute of Portland is pleased to offer several culinary arts programs to prospective students, including Diploma programs in Art of Cooking, and Baking & Pastry, an AA in Culinary Arts, and a BS in Culinary Management.

Diploma in Art of Cooking

The Art of Cooking diploma program is a 51 quarter-credits course in basic kitchen skills and food science. This diploma program include training in ServSafe sanitation and safety as well as job seeking skills. Graduates are typically ready to work in entry-level food service positions.

Diploma in Baking & Pastry

The Diploma in Baking and Pastry course is focused on providing theoretical learning and industry experience in food safety, nutrition, basic culinary skills, and four baking-intensive quarters. The Diploma in Culinary Skills offers much of the same training, with a stronger focus in American cuisine, making sauces, cooking meat, preparing vegetables, and recipe development

AA in Culinary Arts

The Art Institute of Portland is pleased to offer an AA in Culinary Arts degree to prospective students. The AA in Culinary Arts is a 21-month program. It covers basic kitchen skills as well as international cuisine and restaurant management. It is rounded off with an externship at a food service facility in the surrounding area.

BS in Culinary Management

Available as a Bachelor of Science degree program, the Culinary Management curriculum at The Art Institute of Portland is designed to give graduates the skills needed for entry-level management and supervisory roles in the food service industry. Combining coursework in human resources, food safety, technology, and communication, the Culinary Management program also instills leadership skills in graduates that are vital for the workplace. While much of the coursework takes place in a classroom environment, this curriculum culminates in a hands-on externship, providing graduates with vital real-world experience.

Incorporated in 1851, Portland is a city located near the confluence of the Willamette and Columbia rivers in the U.S. state of Oregon. It's warm summers and rainy but temperate winters make it an ideal location for growing roses, and for more than a century Portland has been known as "The City of Roses".

With 28 breweries inside the city, Portland is well-known for its microbrewery beer. In fact, Portland is often said to be the home of the microbrew revolution in the United States.
