Potatoes Cooked in Duck Fat
Ingredients:
- 1 pound potatoes peeled
- 3 tbsps duck fat or pan drippings
- 3 cloves garlic finely sliced
- 2 tbsps chopped parsley
Procedure:
Wipe the potatoes and cut them into chunks. Heat the duck fat in a shallow pan then put in the potatoes. Season generously with salt and continue cooking for about 10 minutes over a moderate heat before turning.
Lower the heat and cook for a further 30 minutes turning from time to time so that they crisp on all sides. When they are almost done stir in the sliced garlic and parsley and season with a little black pepper.
