Culinary Arts Students RosevilleThe Roseville campus of the Institute of Technology offers three different options in the culinary arts. Students choose between Baking and Pastry Specialist, Culinary Arts Professional, and Culinary Arts Specialist. Depending on the chosen course, expected completion can be as early as eight months.

About the Baking and Pastry Specialist Program

Students of the Baking and Pastry Specialist program learn a general curriculum as well as specialized training. The curriculum includes skills training for breads, specialty breads, cakes, and a variety of desserts.

About the Culinary Arts Professional Program

The Culinary Arts Professional program covers the skills and experience necessary to work as a professional chef, manager of a restaurant or catering business, or dessert specialist. It is considered an extension of the Culinary Arts Specialist program and offers twice as much classroom and academic training. Like the Culinary Arts Specialist program, it includes a 180-hour externship prior to graduation.

About the Culinary Arts Specialist Program

The Culinary Arts Specialist program includes information and training to enter the culinary profession at the entry-level position. Basic education includes issues of food safety and sanitation, concepts of the food service industry, pastry cooking, general kitchen skills, and classic French cuisine. The program is rounded off with a five-week externship that places students in an ideal position for finding employment.

Accreditation

Once students graduate from their chosen culinary program, they meet the standards for American Culinary Certification for ServSafe. This food safety program is part of the National Restaurant Association Educational Foundation and provides the most recent scientific information available on food safety and best practices.

Financial Aid

Financial aid is available through the Institute of Technology for those who qualify. They accept all federal and state loans, financial aid, and grants. They also accept national, military, and local scholarships when applicable. For students having trouble meeting tuition, they also offer assistance in finding ways to fund their education.
