Associate of Science - Culinary Arts
The Associate of Science degree in Culinary Arts program has a comprehensive curriculum that includes principles of food service production, food service sanitation, nutrition, stock and sauces, American regional cuisine, dining room management, introduction to baking & pastry, storeroom operations, meat cutting, international cuisine, and French cuisine.
The program includes intensive laboratory sessions combined with solid academics and practical, hands-on experience. The student will learn to function in any environment that requires professional knowledge of food, its preparation and handling, and cooking from basic to creative, in the food service industry.
Graduates of this program will be prepared to work in positions in full service restaurants, hotels, clubs and resorts, catering companies, corporate restaurants, health spas, cruise ships, private homes, and entertainment industry.

Associate of Science - Baking & Pastry Arts
The Associate of Science degree in Baking and Pastry Arts provides instruction in the art and science of the baking profession. Students in this program will use a variety of tools and equipment to produce items such as quick breads, yeast breads, cakes, frozen desserts, centerpieces, candies, cookies and various pastries.

This course will prepare student academically, kinesthetically and professionally for the demands of a entry level baker. It will put into place the foundation that the students will need to build a career as a professional baker or pastry chef. The course of study is a competency based progressive learning curriculum that is reinforced with general studies and values to meet the industry demands of the expectations of a professional chef.
The student who successfully complete the AS Degree in Baking and Pastry Arts will have completed in addition to their standard classes a project in Guest Service, which is the design of a business plan for development of a retail bakery.

The faculty members at the Keiser University Center are chosen for their experience in the field and their ability to work in close relationships with the students. Almost all instructors have spent time either running their own kitchens or working with the best in the field.
The Tallahassee campus boasts four fully-equipped kitchens, a banquet room, a lecture hall, and a cooking demonstration classroom. The kitchens are newly renovated and offer all the modern amenities and industry equipment needed to stay abreast of the current technology in the culinary world. The other Keiser campuses – to which culinary students have access – also contain computer labs, a library, and student services facilities.
