About the Certificate in Baking and Pastry Arts I Program
In the Level 1 Baking and Pastry Arts program, students learn baking skills, in addition to the fundamentals of pastry and bread-baking. In addition to these topics, students also study cake decoration, desserts, all-purpose baking and pastry arts. Upon completion, students are prepared to seek employment in catering houses, bakeries, and restaurants as an assistant baker or pastry cook.
About the Certificate in Baking and Pastry Arts II Program
Building on the skills learned in Baking and Pastry Arts I, the Baking and Pastry Arts II program places an emphasis on coordination and teamwork, in addition to developing the skills necessary in the pastry and baking industry. With topics such as regional desserts, frozen desserts, cakes and pastries, courses are taught via lecture and hands-on kitchen instruction.

In addition, students of the Level 2 program receive and introduction to the pastry arts, learning the basics of pastry-making and fine desserts.
In addition to classroom instruction, students of this program also working in the student-run Culinaria restaurant, learning to prepare modern North American cuisine, all the while rotating through different positions found in any restaurant. Upon graduation, students are well-equipped for entry-level food service positions, such as short-order cook, line cook, and prep cook.
About the Diploma in Entrepreneurship & Restaurant Ownership Program
An ideal extension for students who have graduated from the Culinary Arts Diploma program, the Diploma in Entrepreneurship & Restaurant Ownership program builds upon the fundamentals of food service industry knowledge and culinary skills. Dealing with topics such as staffing a restaurant, customer service, and food quality, this program focuses on understanding profit margins, and financial management. About the Art of Cooking and Baking and Pastry Diploma Programs
Two additional diplomas offered through the International Culinary School are the Art of Cooking and Baking and Pastry. The Art of Cooking program offers 51 quarter-credits in basic kitchen skills and food science.
The Baking and Pastry program is a 49 quarter-credit course that focuses on the skills necessary for working in a bakery, including making breads, desserts, and cakes. Both diploma programs include training in ServSafe sanitation and safety as well as job seeking skills. Graduates are typically ready to work in entry-level food service positions.
Accreditation
The Art Institute of Vancouver is accredited by the Private Career Training Institutions Agency of British Columbia (PCTIA) and registered with the Ministry of Advanced Education, Student Services Branch.

Most culinary classes are taught by chef-instructors who come from a variety of national and international restaurants; the Culinary Management courses are taught primarily by the behind-the-scenes masters of successful businesses.
