Why do chefs use All-Clad?
D3 features three bonded layers and has been the standard for cooking with All-Clad for 20 years. The late, great Anthony Bourdain said that a sauté pan is one of the most important pieces of kitchen equipment you’ll ever own. He even wrote that “A proper sauté pan should cause a serious head injury if it is brought down hard against someone’s skull.”
And this sauté pan will do just that. It’s sturdy and strong and will be the backbone of your kitchen.
When chefs cook, it’s not just the heat from the bottom of the pan that they use. Food is cooked using the heat that’s radiating off of the surface and sides of their cookware. This pan retains heat and will stay hot long after you’ve turned your stove off.
The reason for chefs using these beautiful pans is that they brown food better. The extreme heat that’s radiated brings juices to the surface of the meat that you would otherwise not get. Browning of meat releases flavor molecules from natural amino acids and sugars. This also removes excess fats.

These cooking vessels are made by bonding or “cladding” various metals together. They use different metals for this, and the purpose is to utilize the best qualities of each metal. What is it clad with and why?
Aluminum is best known for its conductivity or the ease at which heat can pass through certain metals. The bonded aluminum core combines high-strength, low-weight properties with thermal conductivity. This means that your pots and pans heat evenly without any hotspots. This aluminum is encased in stunning stainless steel.
Why stainless steel and not just steel?
Steel is iron and carbon. But stainless steel has high levels of chromium which forms an invisible layer that prevents it from staining. Stainless steel is known for being corrosion and temperature resistant. It’s also known for its durability and shear strength. This pan isn’t going to warp and twist. But it’s not just a single type of stainless steel.
The inside of the pan is made from 18/10 stainless steel. This type of stainless steel doesn’t react with acidic foods. Non-reactivity means you can cook your fried green tomatoes without having to worry about affecting your food or your cookware.
Cooking acidic foods in reactive cookware can cause pitting on the pots and pans and leave your food tasting metallic. It’s also dangerous to your health because metals leach into your food.
Improved non-stick qualities…
The All-Clad D3 ARMOR is slightly different in that it doesn’t have the normal non-stick coating, but rather it has a textured finish which improves its non-stick properties. Non-stick coatings, as tempting as they are, often contain chemicals that are dangerous to your health. Luckily, this is not the case with stainless steel.
However, if you’re not used to working with stainless steel, then you might not know how to take advantage of the non-stick properties of the pan. It’s not the same as a non-stick coating. You need to heat your pan up slightly before adding oil or whatever you prefer to use. So preheat your pan, and the chances of your ingredients sticking to the bottom is heavily reduced.
Use them on any heat source…
The outer, or bottom of the pan is made with 18/0 stainless steel that is slightly magnetized, so it can work on induction stovetops or any stovetop. Because of the conductive properties of the metals, it’s made with, this pan heats up faster, saving you time and saving energy.
Three quarts of space (2.8 liters) makes it large enough for a decent stew. It’s got a substantial surface area which will allow for space for condensation to dissipate. Plus, if you want to lock moisture in, then you’ve got the lid for that.
The straighter sides allow for more space than frying pans with curved sides. But it’s got enough of a curve, so when you stir, you get all the contents out. As we all know, it’s rather annoying when you’ve made a great sauce, and a blob of something that was hiding in the corner pops up, leaving your sauce lumpy.
The medium-sized sides will block oil or grease splatters and splashes. The slight curves on the edges are specifically made for drip-free pouring. From searing to browning, frying, sauces, stews, this is the optimum size pan for all your cooking needs. It’s also broiler and oven safe up to a whopping 600℉/310℃.
The beautiful stainless steel will look stylish in any kitchen. The handles are ergonomically designed to sit perfectly in your hands. To add to the style, the pan’s handle is riveted on, giving it a classic look. The pan also features a large assist handle to help out when you’ve cooked a heavy stew.
The handles are contoured to make tossing and handling easy and comfortable. Not only that, but these are stay-cool handles that don’t heat up on the stovetop. Stay-cool handles make burnt fingers a thing of the past. While the pan will reach its optimum heat in record time, the handles will not heat up.
There are few things worse than cooking a sumptuous meal that lands on the floor and leaves you without fingerprints.
However, be aware that if you put this pan in the oven, that the handles will heat up, so make sure to handle them with oven mitts.
Stylish and secure…
The lid is tight-fitting to lock in the moisture and heat necessary to start or finish off your meal. It’s stainless steel and finishes off the look of the pan quite tastefully. The handle of the lid is riveted to the lid, adding to the stylishness of this pan. And if you have other All-Clad cookware of the same size, the lids are interchangeable.
How do I care for my stunning sauté pan?
It’s better to clean this pan yourself than to put it in a dishwasher. Salts used in dishwashers cause pitting in your cookware. You don’t want tiny rust particles ruining your beautiful pan.
Something to remember is that when you use this pan and want to add salt, make sure that the water is boiling before adding it. And remember to only add little amounts of salt at a time because adding too much can cause your water to boil over.
Start with a low heat…
Make sure not to heat your pan too much before adding your oil. If you burn the oil, it’s hard to remove. Also, never use steel wool or steel brushes on stainless steel. You’ll ruin the non-stick qualities and possibly scratch the glossy stainless steel surface.
Don’t use bleach or cleaners that contain chloride on your stainless steel. Bleaches will dull that glossy finish and may leave permanent stains. Dishwashing soap and a sponge will do the job just fine. If it’s a bit hard to clean, then just heat the pan up slightly and try again. The heat will help loosen whatever is stuck to your pan.
